2 ounces Old Tom or London Dry gin
1 ounce simple syrup
¾ ounce lemon juice
Lemon wedge, for garnish
The first thing you are going to want to do is fill the Collins class about half-full of ice, then set it aside in the freezer to chill. Now, pour the gin, syrup, and lemon juice into your shaker. Also, note that you can substitute gin for vodka, turning this into a Vodka Collins! Add about 1 cup of ice, then shake until chilled. Now, strain the drink into the glass and fill with soda water. Garnish with a lemon wedge, and a bar cherry if you’re feeling extra fancy!
